A super smooth and silky RIS, aimed at Makers Mark Bourbon Barrels for a short sojourn, left for 12 months because we laugh in the face of scheduling. The result is unexpected but superior, like it was always meant to be. 10.5% ABV

12 malts drive the chocolate complexity: with savoury biscuit, sweet caramel and bitter chocolate all contributing their opinion. Gentle notes of rye, oats and wheat add to the cacophony. A perfect RIS combo of Willamette, Simcoe and Columbus barely waylay the chaos of dank pine, minty spice and a balanced white pepper bitterness. An ambitious project that confused itself in its simplicity.
