Classic lime citrus, white flower and ginger aromas, with some complex preserved lemon peel, oyster shell and honeydew notes. The barrel fermentation has added richness and volume to the mid palate against the preserved lemon and mineral characters coming through. The great natural acidity then pulls the palate tight again and drives through with lime juice and a touch of mineral salinity.
