Bird in Hand Sauvignon Blanc 2025 - Adelaide Hills, South Australia

2025 was an outstanding vintage characterised by a warm growing season, cool nights for ideal acid retention and favourable autumn conditions. The combination of early ripening, balanced acidity, and clean, concentrated flavours has positioned this vintage as highly promising for the Adelaide Hills wine region, producing wines of both immediate appeal and potential longevity.

Fruit was predominantly sourced from within the high-altitude cool pockets of the Adelaide Hills. The fruit was gently crushed, destemmed, and immediately chilled before being pressed to tank where only the purest free run juice underwent a cool fermentation over approximately 10-12 days. All vineyard parcels were kept separate until blending, to allow the winemakers the best possible options for the final wine. Individual batches were chosen based on flavour, complexity, and cohesiveness within the blend to produce a fresh and vibrant wine that represents the very best Sauvignon Blanc of the vintage.

2025 Sauvignon Blanc shows lifted, fresh and punchy aromas, of lemongrass, passionfruit and citrus blossom. The concentrated palate sings, with fresh lime, grapefruit and white peach. Lively natural acid balances and elongates the palate with a crisp finish.  

Best enjoyed young as an aperitif or paired with seafood such as oily grilled fish, chargrilled squid and fresh prawns.
