The second release of this small batch of Shiraz (Syrah) without bunches or viognier. One for the purist.
Gently fermented as whole-berries and macerated for 6 weeks then pressed to 100% new oak (Taransaud TBSPN puncheon) and matured for two years.
Leaving the viognier and whole-bunches out of the fermentation allows for a longer maceration. 100% new oak is possible due to the type of barrel not being to oaky.
Drink with: Lamb heavily flavoured with middle-eastern spices and herbs.
